ZAPEČENE TIKVICE

Sastojci:

4 tikvice
2 češnja češnjaka
4 žlice krupno ribanog sira Grana Padano
1 jaje
½ žličice senfa
5 žlica krušnih mrvica
1 žličica sitno sjeckanog peršinovog lista
sol
papar s limunom (recept na Ciao Karmela)
1 žlica kukuruza – po želji
2 – 3 žlice maslinovog ulja

Priprema:

Tikvice operite i uzdužno prepolovite.
Blanširajte ih u kipućoj slanoj vodi 5 minuta. Izvadite. Kad se malo prohlade, žličicom im izdubite sredinu.
Pećnicu zagrijte na 250 °C. Namastite vatrostalnu posudu za pečenje.
Sitno nasjeckajte češnjak zajedno s izdubljenim mesom tikvica, dodajte sir, peršin i – po želji – kukuruz.
U manjoj zdjelici vilicom istucite jaje sa senfom pa ih dodajte pripremljenoj smjesi. Dobro posolite i popaprite po ukusu. Na kraju umiješajte krušne mrvice.
Tim nadjevom punite tikvice koje ste poslagali u pripremljenu posudu. Lagano ih poprskajte maslinovim uljem i pecite 20-ak minuta da dobiju lijepu zlatnu boju.

BAKED ZUCCHINI

Ingredients:

4 zucchini
2 cloves garlic
4 tbsp coarsely grated Grana Padano cheese
1 egg
½ teaspoon mustard
5 tbsp breadcrumbs
1 teaspoon parsley leaves, finely chopped
salt
lemon pepper (search Ciao Karmela for recipe)
1 tbsp corn kernels (optional)
2-3 tbsp olive oil

Method:

Wash the zucchini and halve them lengthwise.
Blanche in boiling salted water for 5 minutes. Drain and leave to cool. Use a spoon to remove the centre and set aside.
Preheat the oven to 250 °C. Grease an oven-proof dish.
Finely chop the garlic and the scooped-out centres of the zucchini. Add the cheese, parsley and corn (optional).
Beat the egg with mustard in a small bowl. Add to the stuffing. Season well with salt and pepper to taste. When combined, add the breadcrumbs.
Stuff the zucchini arranged in the baking dish. Sprinkle lightly with olive oil and bake for about 20 minutes, until nicely golden.
