VARIVO OD BUČE

Sastojci:

1 kg krupno naribane buče

1/3 šalice octa

sol

2 – 3 žlice ulja

2 žlice brašna

1 žlica slatke mljevene crvene paprike

½ šalice kiselog vrhnja

sjeckani svježi kopar

Priprema:

Buču posolite i prelijte octom. Poklopite i ostavite 1 sat da „pusti vodu“.

Odležalu buču lagano stisnite među dlanovima da iscijedite sav višak tekućine.

Na ulju kratko prepržite brašno dok ne dobije zlatnu boju. Dodajte papriku, kopar i ocijeđenu buču. Promiješajte pa dolijte toliko vode da prekrije buču.

Kuhajte na laganoj vatri, povremeno miješajući, 30-ak minuta (dok buča ne omekša). Po potrebi dolijte još vode.

U maloj zdjelici razmutite vrhnje s 2 – 3 žlice juhe od buče pa sve vratite u lonac. Promiješajte, začinite po ukusu, pustite da još jednom zakuha i maknite s vatre.

Poslužite s pire krumpirom.

SQUASH STEW

Ingredients:

1 kg grated squash
1/3 cup vinegar
salt
2-3 tbsp oil
2 tbsp flour
1 tbsp sweet paprika
½ cup sour cream

Method:

Season the squash with salt and vinegar. Cover and leave for an hour so as to release the liquid.
Squeeze the squash gently between your fingers to drain any excess liquid.
Fry the flour briefly in oil, until nicely golden. Stir in the paprika and drained squash. Add just enough water to cover the squash.
Cook over low heat, stirring occasionally, for about 30 minutes (until soft), adding additional water if needed.
Combine the sour cream and 2-3 tablespoons of the squash soup in a small bowl. Stir, season to taste, bring to a boil, and remove from heat.
Serve with mashed potatoes.
