TOSKANSKA JUHA

Od graha, tikvica i špinata – zdrav obrok pun vlakana i vitamina

Sastojci:

1 manja glavica luka, usitnjena
1 češanj češnjaka, usitnjen
1 manja tikvica, izrezana na kockice
1 žuta mrkva, naribana – po želji
1 konzerva bijelog graha
200 g svježeg mladog špinata
1 ½ l vode ili povrtnog temeljca
sol
kajenski papar
maslinovo ulje

Priprema:

U loncu za juhu, na maslinovom ulju propirjajte luk da uvene pa mu dodajte tikvicu i češnjak (i mrkvu, ako koristite). Posolite i miješajte da tikvice omekšaju.

Grah ocijedite, isperite i dodajte u lonac. Sve zalijte vodom ili temeljcem. Kuhajte na srednjoj vatri 10-ak minuta pa dodajte krupno rezani špinat.

Smanjite vatru i kuhajte još 10-ak minuta.

Začinite po ukusu kajenskim paprom i solju.

Kad je juha gotova, dodajte joj 1 žlicu maslinovog ulja.

Napomena: U tanjur juhe možete naribati i malo sira grana padano, a juha će fino prijati i uz krutone od jučerašnjeg kruha.

TUSCAN SOUP

Made from beans zucchini and spinach – a healthy meal rich in fibre and vitamins

Ingredients:

1 small onion, chopped
1 clove garlic, chopped
1 small zucchini, diced
1 yellow carrot, grated (optional)
1 can white beans
200 g fresh baby spinach
1 ½ l water or vegetable stock
salt
cayenne pepper
olive oil

Method:

Sauté the onion in olive oil in a soup pot until translucent. Add the zucchini and garlic (and optionally the carrot). Season with salt and cook stirring until the zucchini is tender.

Sieve the beans, rinse and add to the pot. Pour in the water or stock. Cook over medium heat for about 10 minutes. Add the coarsely cut spinach.

Lower the heat and cook for another 10 minutes.

Season to taste with cayenne pepper and salt.

When the soup is done, add 1 tablespoon of olive oil.

Note: You can sprinkle your soup plate with grated Grana Padano cheese and/or serve with croutons made from yesterday’s bread.
