QUICHE LORRAINE

Sastojci:

Tijesto:

2,5 šalice glatkog brašna

180 g hladnog maslaca (na kockice)

Sol

4 žl ledene vode

Nadjev:

5-6 kriški mesnate slanine

1 žl ulja

120 g ribanog sira (gouda, gruyere i sl.)

4 jaja

1 šalica kiselog vrhnja

½ šalice mlijeka

Muškatni oraščić

Sol, papar

Priprema:

Brašno, maslac i sol usitnite u multipraktiku. Dodajte vodu i brzo zamijesite tijesto. Oblikujte ga u kuglu, zamotajte u prozirnu foliju i ostavite 30 min u hladnjaku.

Pećnicu zagrijte na 180 stupnjeva C.

Slaninu narežite na sitno i prepržite kratko na ulju.

Tijesto razvaljajte i njime obložite dno i stijenku kalupa za tortu (24 cm).  Nabockajte vilicom, prekrijte papirom za pečenje i napunite suhim grahom. Pecite 10 minuta, a zatim maknite grah i papir. Vratite u pećnicu na još 10 minuta dok tijesto ne počne lijepo zlatiti. Izvadite iz pećnice.

Po tijestu rasporedite prženu slaninu pa je pospite ribanim sirom. Posolite i popaprite po želji.

Posebno umutite jaja s vrhnjem i mlijekom. Dodajte i malo muškatnog oraščića pa prelijte po piti.

Pecite 35-45 minuta dok pita ne postane lijepo zlatna. Izvadite iz pećnice, ostavite 5 minuta da počine pa poslužite toplo.

QUICHE LORRAINE

Ingredients:

For the crust:
2 ½ cups plain flour
180 g cold butter, diced
salt
4 tbsp ice-cold water

For the topping:
5-6 rashers meaty bacon
1 tbsp oil
120 g grated cheese (gouda, gruyere, or similar)
4 eggs
1 cup sour cream
½ cup milk
grated nutmeg
salt and pepper

Method:

Combine the flour, butter and salt in a food processor. Add the water and knead briefly. Form a ball, wrap with plastic foil and refrigerate for 30 minutes.
Preheat the oven to 180 °C.
Finely chop the bacon and sauté briefly in oil.
Roll out the dough and cover the bottom and sides of a 24-cm cake tin. Prick with a fork, cover with a sheet of parchment paper and top with dry beans. Bake for 10 minutes before removing the paper and beans. Bake for 10 more minutes, until the crust starts turning golden. Remove from the oven.
Top with the fried bacon and grated cheese. Season with salt and pepper to taste.
Beat the eggs, cream and milk in a separate bowl. Season with grated nutmeg and pour over the pie.
Bake for 35-45 minutes, until nicely golden. Remove from the oven and leave to set for 5 minutes. Serve warm.
