MEKSIČKA JUHA OD PILETINE

Sastojci

500 g pilećih prsa, narezanih na kockice

1 manja glavica luka, narezana na kockice

Meksički umak (taco ili enchilada)

2 l vode ili juhe

1 manja konzerva kukuruza

Žlica vrhnja

Naribani tvrdi sir

Kukuruzni čips

Listovi svježeg korijandera

Avokado

Sol

Priprema

  • Na ulju popržite luk. Dodajte piletinu, podlijte s malo vode ili juhe I pirjajte dok piletina ne pobijeli.
  • Dodajte meksički umak, dolijte ostatak tekućine i posolite. Kad juha prokuha, umiješajte kukuruz. Neka omekša. Umiješajte vrhnje i naribani sir. Prije serviranja, zdjelice s juhom ukrasite listovima svježeg korijandera i ploškama avokada I dodajte kukuruzni čips.

MEXICAN CHICKEN SOUP

Ingredients:

 

500 g chicken breast, diced

1 medium onion, diced

Enchilada sauce

2 l water or chicken stock

1 can whole kernel corn

1 tablespoon sour cream

Grated gouda or cheddar cheese

Corn chips

Cilantro leaves to garnish

Avocado slices

Salt

Method:

Sautee onion in a wide pot. Add chicken and enchilada sauce and stir until chicken turns white, adding water or chicken stock as needed. Pour the remainder of the liquid into the pot and salt to season.

Bring to a boil and add corn.

When the corn is tender, add sour cream and grated cheese.

Before serving, put corn chips in the bowls, pour soup over and garnish with chopped cilantro leaves and avocado slices.
