MEKI KUKURUZNI MUFFINI

Sastojci:

½ šalice krupnog kukuruznog brašna
1 ½ šalica bijelog brašna
2 žličice praška za pecivo
1 jaje, lagano umućeno
1 šalica jogurta
1 ½ šalica mlijeka
1 žličica senfa
1 žličica nasjeckanog peršinova lista – po želji
½ šalice ribane goude
½ šalice mozzarelle
½ crvene paprike, nasjeckane
½ zelene paprike, nasjeckane
3 – 4 kriške šunke, sitno nasjeckane
1 mladi luk, nasjeckan – po želji
sol

Priprema:

Pećnicu zagrijte na 200 °C.
U većoj zdjeli pomiješajte brašna, sol, peršin i prašak za pecivo.
Posebno izmiješajte jaja, senf, jogurt i mlijeko pa ulijte u mješavinu brašna. Dobro promiješajte.
U manjoj zdjeli pomiješajte sireve, šunku, paprike i luk.
U namašćene kalupiće ulijte smjesu za muffine do 2/3 kalupa. Po vrhu pobacajte mješavinu sira, šunke i povrća.
Pecite 15 minuta. Ostavite u kalupu 10 minuta, a zatim izvadite i poslužite toplo.

SOFT CORN FLOUR MUFFINS

Ingredients:

½ cup coarse corn flour
1 ½ cup white flour
2 teaspoons baking powder
1 egg, lightly beaten
1 cup yogurt
1 ½ cup milk
1 teaspoon mustard
1 teaspoon chopped parsley leaves (optional)
½ cup grated gouda cheese
½ cup mozzarella cheese
½ red pepper, chopped
½ green pepper, chopped
3-4 slices ham, finely chopped
1 spring onion, chopped (optional)
salt

Method:

Preheat the oven to 200 °C.
Combine the corn and white flour, salt, parsley and baking powder in a large bowl.
Combine the eggs, mustard, yogurt and milk in a separate bowl and then add to the flour mixture. Stir well.
Combine the cheeses, ham, peppers and onion in a small bowl.
Fill 2/3 of each greased muffin cup with the mixture. Sprinkle with the cheese mixture.
Bake for 15 minutes. Leave to cool for 10 minutes. Transfer to a plate and serve warm.
