LEPINJE OD PIRA

Sastojci:

Za lepinje:
250 g pirova brašna, tip 630
250 cjelovitog pirovog brašna
1 paketić suhoga kvasca
½ žličice soli
1 žlica šećera
2 žlice ulja

Za premaz:
1 bjelanjak, ulupan
4 žlice ulja
2 žlice suhog timijana
1 – 2 žlice sezama
¼ žličice soli

Priprema:

Od sastojaka za lepinju i 250 ml mlake vode umijesite glatko meko tijesto. Stavite ga u zdjelu, pokrijte krpom i ostavite na toplom 2 sata da naraste.

Lim za pečenje zagrijte na 220 ºC.
Lim za pečenje prekrijte papirom za pečenje.

Naraslo tijesto još jednom premijesite, oblikujte u štrucu pa režite komade debele 1 cm.

Od svakog komada, pobrašnjenim dlanovima, formirajte pogačicu (oko 12 cm u promjeru).

Stavite ih u pripremljen lim i pecite na najnižoj prečki dok se ne napuhnu (8 – 10 minuta).

Pomiješajte sve sastojke za premaz.
Lepinje okrenite, premažite s premazom i vratite u pećnicu, na srednju prečku na još 6 – 10 minuta.

SPELT FLATBREAD

Ingredients:

For the flatbread:
250 g spelt flour (type 630)
250 g wholemeal spelt flour
1 pouch dry yeast
½ tsp salt
1 tbsp sugar
2 tbsp oil

For the topping:
1 egg white, beaten
4 tbsp oil
2 tbsp dried thyme
1-2 tbsp sesame seeds
¼ tsp salt

Method:

Combine the flatbread ingredients and 250 ml lukewarm water to make smooth dough. Place in a bowl, cover with a kitchen cloth and leave for 2 hours in a warm place to rise.

Heat a baking tray in the oven preheated to 220 ºC.

Line the baking tray with a sheet of parchment paper.

Knead the risen dough, form a loaf and cut into 1 cm thick pieces.

Flatten each piece between the palms of your hands (dusted with flour) to make flatbreads about 12-cm in diameter.

Arrange on the baking tray and bake on the lowest rack until puffed up (8-10 minutes).

Combine the topping ingredients.

Turn the flatbreads upside down, spread the topping and return to the oven (medium rack) for another 6-10 minutes.
