GRČKE PITE OD ŠPINATA

Sastojci:

500 g mladog špinata
500 g feta sira
5 – 6 češnjeva češnjaka, sitno nasjeckanih
3 jaja
1 dl maslinovog ulja
sol i papar
kore za savijače
sezam

Priprema:

Špinat operite i ocijedite pa ga stavite pirjati na ½ dl maslinjaka u dublji široki lonac. Kad povene, dodajte češnjak, sol i papar i pirjajte, miješajući, još 10-ak minuta. Maknite s vatre i – ako je špinat pustio dosta tekućine – pažljivo je izlijte iz lonca.
U špinat vilicom umiješajte razmrvljenu fetu i – na kraju – jaja.
Pričekajte da se nadjev ohladi.
Pećnicu zagrijte na 200 °C.
Lim za pečenje lagano namastite.
Ostatak ulja pomiješajte s malo vode.
Koru za savijače prerežite uzdužno na 3 jednaka dijela (da dobijete 3 trake).
Svaku traku lagano premažite kistom uronjenim u mješavinu ulja i vode pa na jedan kraj stavite žlicu nadjeva.
Sad možete odlučiti hoćete li pite zavijati u rolice ili pak vrpcu s nadjevom presavijati u trokut. Važno je da presavijate/zavijate skroz do kraja trake.
Tako zamotane pite slažite u pripremljen lim.
Kad su sve pite u limu, premažite ih ponovno s nauljenim kistom, pospite sezamom i pecite 20-ak minuta dok ne postanu hrskave i lijepo zlatno-smeđe.
Poslužite tople ili hladne, uz tzatziki umak.

GREEK-STYLE SPINACH PIES

Ingredients:

500 g baby spinach
500 g feta cheese
5-6 cloves garlic, finely chopped
3 eggs
1 dl olive oil
salt and pepper
Feuille de Brick pastry sheets
sesame

Method:

Wash and drain the spinach. Sauté in ½ dl olive oil, in a large pot, until it shrinks. Add the garlic, season with salt and pepper and sauté, stirring constantly, for about 10 minutes. Remove from heat and – if there is a lot of liquid left, pour it out carefully.
Stir in the crumbled feta cheese and then the eggs, using a fork.
Leave to cool.
Preheat the oven to 200 °C.
Grease a baking tin lightly.
Combine the remaining oil with a small amount of water.
Cut the pastry sheet lengthwise into three equal strips.
Brush each strip lightly with the mixture of oil and water. Place a tablespoon of the filling on one end of each strip.
Choose whether you’d like your pies to be rolled up or folded into a triangle. The only important thing is to keep rolling/folding until you reach the other end of the pastry sheet.
Arrange the pies in the baking tin.
Brush each with the oil and water mixture, sprinkle with sesame and bake for about 20 minutes, until crunchy and nicely golden.
Serve warm or cold with tzatziki sauce.
