GRAVČE NA TAVČE

Sastojci:

500 g bijelog graha (tetovca)
1 velika glavica luka
1 – 2 paprike
2 – 3 meke rajčice
1 žlica slatke mljevene crvene paprike (makedonski bukovec)
1 žlica brašna
½ žličice ljute mljevene paprike – po ukusu
sol, papar
majčina dušica
1 ½ dl ulja
kobasice ili sušeno (kuhano) meso – po želji

Priprema:

Grah preko noći namočite u velikom loncu vode. Drugi ga dan posolite i kuhajte – na laganoj vatri, oko 2 sata. Ocijedite.
Luk narežite na tanke ploške, papriku očistite od sjemenki i narežite na trakice.
Propirjajte na malo ulja da luk postane staklast, a paprika „povene“, a zatim dodajte rajčice narezane na kockice. Pirjajte 20-ak minuta, miješajući povremeno.
Kad je povrće omekšalo, dodajte sol, papar, majčinu dušicu, 1 žličicu slatke i ljutu papriku (ako koristite). Dodajte i kuhani grah. Umiješajte i brašno.
Tako pripremljenim grahom punite zemljanu posudu. Dolijte toliko vode da prekrije grah, a zatim odozgo pospite preostalom slatkom paprikom.
Ako želite, po grahu složite kobasice ili meso.
Preostalo ulje jako zagrijte na tavi pa njime oprezno prelijte pripremljen grah.
Pecite u pećnici na 180 °C 40 minuta.

NAPOMENA:
Gravče je još ukusnije drugi dan. Samo ga kratko zagrijte u pećnici i poslužite.

BAKED BEANS, MACEDONIA-STYLE

Ingredients:

500 g white beans (from Tetovo)
1 large onion
1-2 peppers
2-3 ripe tomatoes
1 tbsp sweet paprika (bukovec)
1 tbsp flour
½ teaspoon hot paprika – to taste
salt and pepper
thyme
1 ½ dl oil
sausages or cured (boiled) meat – to taste

Method:

Soak the beans overnight in a large pot of water. Next day, season with salt and cook over low heat for about 2 hours. Strain.
Slice the onion thinly. Seed and slice the peppers.
Sauté in a small amount of oil until the onion is translucent and the peppers are soft. Add the diced tomatoes and sauté for about 20 minutes, stirring occasionally.
When the vegetables are soft, season with salt, pepper, thyme, 1 teaspoon sweet paprika, and hot paprika (to taste). Add the cooked beans. Stir in the flour.
Transfer into an earthen vessel. Pour in just enough water to cover the beans. Sprinkle with the remaining sweet paprika.
Arrange the sausages or meat (optional).
Heat the remaining oil in a pan and pour over the beans carefully.
Bake at 180 °C for 40 minutes.

Note:
Baked beans taste even better the next day. Simply, heat briefly in the oven and serve.
