CIKLA S CJELOVITIM PIROM

Zanimljiva osvježavajuća kombinacija prema naputcima sv. Hildegarde

Sastojci:

4 žlice kuhanog pirova zrna
200 g svježeg zrnatog sira
150 g kuhane cikle
1 žlica svježe naribanog hrena
1 žlica nasjeckanog začinskog bilja (kopra, peršina, matičnjaka…)
2 žlica limunovog soka
sol, majčina dušica, galgant (navršak noža)
1 kiselkasta jabuka, narezana na kriške i lagano prepržena, za posluživanje

Priprema:

Sir i pir lagano promiješajte vilicom.
Kuhanu ciklu ogulite i sitno naribajte. Pomiješajte je s hrenom i začinskim biljem pa dodajte siru.
Začinite limunovim sokom i začinima.
Ukrasite jabukom.

BEETROOT & WHOLE GRAIN SPELT SALAD

An interesting combination according to the instructions of St. Hildegard

Ingredients:

4 tbsp boiled spelt grains
200 g fresh granular cheese
150 g boiled beetroot
1 tbsp freshly grated horseradish
1 tbsp chopped herbs (dill, parsley, balm…)
2 tbsp lemon juice
salt, thyme, galangal (on the tip of a knife)
1 sour apple, sliced and briefly fried, to garnish

Method:

Combine the cheese and spelt using a fork.
Peel and finely grate the boiled beetroot. Combine with the horseradish and herbs. Add to the cheese.
Season with lemon juice and herbs.
Decorate with the apple.
