Ingredients:
1 onion
2 cloves garlic
120 g sun-dried tomatoes
1 tbsp sugar
2 tbsp aceto balsamico (balsamic vinegar)
300 ml passata (puréed tomatoes)
lemon pepper (search Ciao Karmela for recipe)
1-2 tbsp olive oil
500 g gnocchi (search Ciao Karmela for recipe)
Method:
Chop the onion and the garlic. Dice the sun-dried tomatoes.
Sauté the onion and garlic in olive oil, in a deep pan, stirring constantly until translucent. Add the sun-dried tomatoes. Season with sugar and sprinkle with vinegar. Stir and add the passata. Season with lemon pepper and stir again. Lower the heat.
Cook over low heat for 15 minutes, stirring occasionally.
Boil the gnocchi in a large pot of salted water. Drain, pour over with the sauce and top lavishly with grated cheese.
