For 4:

Satay:

400 g chicken breast, cut into cubes

2 tbsp chop shallot

2 tbsp chop garlic

2 tbsp sweet soy sauce

2 tbsp salty soy sauce

2 tbsp lime juice

2 tbsp coconut oil

salt, white pepper

 

 Peanut sauce:

200 g peanut

2 clove garlic

4 shallot

1 tbsp palm sugar

1 red chillies

1 tbsp aromatic ginger

fresh lime juice – to taste

2,5 tbsp sweet soy sauce

1 cuo chicken stock

4 tbsp coconut milk

Method:

First make the peanut sauce:

Grind the sweet chillies, garlic, shallot, palm sugar and ginger than add peanut. Grind to mix until become the paste.

Put peanut paste in a pan,  add chicken stock to dissolve. Add sweet soy sauce and coconut milk and bring to the boil. Simmer peanut sauce until thick and season with salt and pepper. Add lime juice to taste.

 

Make the satay:

put all ingredients for satay in a bowl, mix and coat the chicken well and let marinate for 30 minutes.

Arrange chicken cubes into the bamboo skewers and barbicue over medium . high temperature, for 5-8 minutes, basting with the marinade and turning frequently.

Serve satay with peanut sauce and cooked rice.
