2 bananas, overripe
½ cup brown sugar
¼ cup granulated sugar
¼ cup butter, softened
2 pouches vanilla sugar or 1 teaspoon vanilla
1 ½ cup cereal
1 ¼ cup flour
½ teaspoon cinnamon
a pinch of salt
½ teaspoon baking powder
1 cup chopped chocolate
Beat the eggs, butter, brown and granulated sugar and vanilla with a mixer. Add a mashed banana and beat for 1-2 minutes.
Stir in the cereal, flour, cinnamon and salt with a spatula until uniform. Stir in the chocolate.
Form balls using two spoons and place them on a baking tin leaving enough space between them to rise while baking.
Refrigerate for at least 30 minutes.
Preheat the oven to 160 ºC.
Bake for 18-20 minutes, until baked along the rim and still soft in the centre. They will harden while cooling.
Leave to cool on the tin for about 10 minutes before transferring to a serving plate.
